Escarole and bean soup

  • 2 large escarole heads
  • 6 crushed garlic cloves
  • 4 TBS. extra virgin olive oil
  • 3/4 lb Hot & Sweet Italian Sausage Links, Casing Removed
  • 2 cans 15 oz chicken broth, I use College-Inn
  • 1 can 19 oz cannellini beans, I use Progresso
  • crushed red pepper flakes
  • sel casher
  • Fromage Parmigiano-Reggiano

Rinse the escarole several times in a colander to be sure all the grit has come out, drain and cut the escarole into 1-2 inch pieces.

Heat the oil in a medium sized pan, add the garlic and sauté until the garlic turns lightly golden, this should take about 1 minute

Remove the sausage from its casing and cut it into 1 inch pieces, add the garlic and oil and cook over medium heat until the sausage is lightly browned (this should only take about 5 minutes)

Add the escarole to the pot, mix it with the sausage and the oil so that the escarole absorbs the heat and starts to wilt, use tongs, it makes life much easier

Cover the pot for a minute or two so the escarole shrinks, we need room for the beans and broth

Add the two cans of chicken broth with the cannellini beans to the lid of the saucepan and simmer for about 5 minutes

Add crushed red pepper flakes to your liking, I also put a crust of fresh Parmigiano-Reggiano cheese to spice it up a bit, you only need about a 1 inch piece – add salt as you want

Cover and simmer for about twenty minutes, letting all the ingredients combine.

Ladle into bowls and serve topped with Parmigiano cheese and don’t forget the crusty Italian bread for dipping!
